About Ruffoni Cookware

The story of the Ruffoni family is captivating. It’s like a fable you would hear as a child. Dating back to 1931, when a father made a cooking pan for his firstborn son, Fermide.

In 1962 Fermide Ruffoni and his wife opened their first workshop and began making cookware. The story tells that Fermide’s sons Walter organized with Williams and Sonoma in their first big break, selling their pans in their stores across America. The Ruffoni family still, to this day, runs the company.

 

What you need to know about copper cookware sets

Copper has extraordinary heat conduction. It can conduct heat five times better than iron. Cooking with copper is a concept that has been around for thousands and thousands of years. The material is durable and corrosion-resistant—fun fact: copper cookware has antibacterial capabilities because bacteria cannot survive on copper.

With all that being said, you also have to be gentle with copper. It is a very soft material. It needs to be hand-washed. It does have the capabilities of rusting. When using utensils with it or around it, you must also be careful not to scratch the copper. They are genius pots with a temperament!

Beautiful, the copper cookware has a hammered look to it, which helps with durability and beauty. There are a variety of handles and crowns; my favorite is the garden vegetable one.

They are so chic and unique. The tri-clad stainless steel pans are just as timeless and heat-conductive. They, too, are hammered for conductivity and lasting strength. The craftsmanship on this cookware is truly a sight to behold. They are stunning pieces to add to any kitchen.

Tin vs. Stainless Linings in Copper Cookware

The tin lining is slightly more temperamental. You would not want to use a metal spoon or spatula for cooking or scrapping food out of this pan. They also hate the dishwasher. Tin does not do well in high heat either.

You will want to cook somewhere in the low to medium heat range to preserve the life of this pan. But, this pan is fantastic to cook with!

Stainless steel lining is a little more forgiving in areas such as scraping and metal tools, yet you always want to be careful not to be too aggressive on metals.

The dishwasher is not their friend, but they can tolerate more of a “cleaning” than the tin lining can.

 

Thickness and Cladding

There is a variety of thicknesses depending upon your cladding of choice: copper with tin, copper with stainless steel, or stainless steel with aluminum alloy core.

When it comes to thickness, it does matter. The thicker the pan, the better it is to hold onto that heat and keep your meals warmer longer!

  • Stainless steel offers a sidewall thickness of 3.05mm.
  • Copper with tin lining has a thickness of 1.5-2.0
  • The copper pan with stainless steel lining is the same 1.5-2.0

 

The benefit of using copper cookware

I found various benefits about copper cookware during my Ruffoni cookware review, primarily the conductivity of copper.

This superpower gives it the ability to heat up faster, but it also cooks things more evenly. Their durability isn’t something to ignore either. They should last you a lifetime if taken care of properly.

A copper pan’s weight is something to consider. Honestly, for a person like me with pathetic upper body strength, draining that gigantic pan of pasta with boiling water isn’t an easy feat!

Having a lightweight, durable pot is life for a chick like myself who spends most of her time at home in the kitchen.

How Does Ruffoni Compare to Other Copper Cookware?

Ruffoni cookware reviews vs. T Fal Ultimate stainless steel copper bottom

While both offer copper properties, Ruffoni is far superior in not only its durability but its cladding. The entirety of the pan is of better quality and does not flake or tarnish on the bottom. However, the T Fal is a cheaper pan, Ruffoni is a far superior pan.

 

Ruffoni Copper vs Mauviel

These are comparable in cost, and both have stood the test of time. Additionally, these pans are both high quality and offered in multiple finishes. Both can go in the oven and are suitable for everyday use but just as beautiful for special occasions.

The Mauviel copper cookware set is of French design, where Ruffoni is Italian. I don’t think you could go wrong purchasing either of these pans.

Ruffoni vs. All-Clad

All-clad is high-quality cookware, but I don’t believe it holds up to the same durability standard as Ruffoni. All-clad, like Ruffoni, has excellent craftsmanship and is a little on the spectrum’s cheaper side.

Both are great products; however, I believe Ruffoni takes the cake on this one.
