When it comes to a Miyabi Chef’s knife, this is a great place to start. The Miyabi Koh chef knife is an affordable beautiful knife and comes in three separate sizes, 6-inch, 8-inch, and 9.5-inch.

Visually all three knives look the same, so it’s up to you to decide how many knives you need to get the job done.

The knife’s core is made from VG-10 Japanese steel. Then there are 64 layers of Damascus steel on top of it, making it a beast in the knife area. These two steel sheets make these knives incredibly durable and able to hold an edge much longer than other chef knives.

It boasts “Scalpel-like sharpness,” and its thin Japanese blade profile of 9.5-12 degree edge angle and true katana edge makes it an incredibly sharp knife.

The knife comes with a 61+ Rockwell Hardness rating, and in all of my knife reviews, this is the hardest knife I have seen to date.

The knife is a full tang, so you can rest assured it’s better for users and less susceptible to breaking, which, let’s face it, when you are spending money on a quality knife, it’s a good thing to know.

Looks-wise, it has a beautiful flower pattern making it visually appealing for pros and new users alike. The lines in the knife handle are unique and give it a very distinguished look.

The octagonal handle is a great tribute to custom knife making and precision. If you are looking for a good entry-level knife at an affordable price point, this is it.

This chef’s knife is a step above the Koh. The reviews seem to agree. Everything has been considered with this knife. From the packaging to the cutting out of the box, it is an incredibly sharp knife. It will definitely help you with all of your kitchen prep work and other cutting jobs that you need to get done.

Simply head to the Amazon page, and you can see people cutting with it right out of the box. It cuts a tomato hands-free, which is pretty impressive on its own because it’s nearly impossible to cut a tomato without holding it. It’s something that is only possible with a super sharp knife, and this chef knife is it!
