Dosa batter has two main ingredients: rice and black gram. The rice is idli rice (sometimes referred to as doppi rice). The black gram is Urad dal. You will use a 2:1 ratio of rice to dal. You can add a few fenugreek seeds (approximately 1 teaspoon) to help with the fermentation process and a handful (about ½ cup) of cooked rice or flattened rice flakes. 

To make the batter, you will soak and grind the rice and black gram. Mix them together. Allow them to ferment, mix them again and add about 2 teaspoons of salt before pouring the batter onto your dosa pan.
